Cranberry Apple Jam

You can peel the apples or leave the peel on. You’ll be putting the fruit mixture through a sieve once it’s been cooked down.

Using a thermometer to temp the jam is the best practice, but if you don’t have a thermometer you can always do the wrinkle test. Chill a plate in the freezer for 5-10 minutes. Spoon a small amount of hot jam onto the plate and let it cool for 2-3 minutes. Gently push the jam with your finger or a spoon. If it wrinkles and forms a skin, it’s set.

This makes about 24 oz of jam, so you’ll have extra that you can either freeze or share with loved ones! If freezing, allow to completely cool before putting in the freezer.

Gluten Free Shortbread Cookies

Make sure your butter or margarine is room temperature before mixing. When mixing, don’t over-mix. The dough is ready once there are no clumps of flour.

Make sure to chill the dough for at least 30 minutes or up to 3-4 days if wrapped tightly.

Step-by-Step Instructions

1 lb Cranberries, 1 lb Apples, Juice of 1 Orange

Simmer Fruit

Spice Mix

In a saucepan, add cranberries, apples, juice from 1 orange, and spice mix. Over medium heat, simmer until fruit is soft. This could take about 10 minutes.

Make Jam

Zest of 1 Orange

Once the fruit is cooked, pour it through a sieve into another saucepan. Add sugar and orange zest and place back on the stove over medium-low heat. Simmer the puree until it reaches 220°F. This could take anywhere from 20-30 minutes. Check Tips and Tricks if you don’t have a thermometer.

Once the jam has reached the right temperature. Pour into the provided jam jar. Allow to cool completely.

Make the Cookie Dough

Gluten-Free Flour

Vanilla

1/4 cup Butter or Margarine, MN Maple Syrup, Zest of 1 Orange

Using an electric mixer, mix butter, gluten free flour mix, vanilla, full bottle of maple syrup, and orange zest. Mix until just combined. Cover and refrigerate for at least 30 minutes.

Shape the Cookies

After dough has chilled, use a tablespoon to measure out each cookie and roll them into balls. Place them on parchment paper lined cookie sheets.

Using the back of the provided jam spoon, press it into the ball of dough, creating an indent. Once all cookies are indented, place in the fridge for another 30 minutes to chill.

Preheat oven to 350°F and Bake

Cranberry Apple Jam

Once the oven is preheated and cookies are chilled. Use the jam spoon to add jam to the center of each cookie, where you made the indent. Be careful to not overfill or the jam will ooze over the sides of the cookie when baking. Bake cookies for 15-25 minutes or until cookies a golden brown. depending on your oven. Allow the cookies to cool on a cooling rack.

When the cookies have cooled, dust the tops with powdered sugar. Enjoy!
